Ingredients
▪ 3 sausages with Greek Black Pig and graviera cheese
▪ 2 tbsp olive oil
▪ 5 puffball mushrooms
▪ 1 red pepper (julienned)
▪ 2 tbsp truffle mayonnaise (100 g mayonnaise, 20 g truffle paste)
▪ 30 g shaved Parmesan
▪ Salt
▪ Oregano
▪ 1 focaccia
Preparation
1. Grill the sausages.
2. Warm the focaccia in the oven with a drizzle of olive oil and a pinch of salt.
3. Sauté the mushrooms in olive oil with salt, pepper, and thyme.
4. On a serving plate, layer the focaccia, truffle mayonnaise, mushrooms, grilled sausages, red pepper, shaved Parmesan, and a sprinkle of oregano.
