▪ 4 sausages with leeks and Greek Black Pig
▪ 300 g fresh potatoes
▪ 60 g Feta cheese (PDO)
▪ 6 cherry tomatoes
▪ 30 g fresh butter
▪ 20 mL extra virgin olive oil
▪ 50 mL white wine
▪ 20 g fresh chopped thyme
▪ Juice of 1 lemon
▪ 10 g sweet paprika (boukovo)
▪ 1 sprig fresh oregano
▪ 1 sprig thyme
▪ Salt, freshly ground pepper
Preparation
1. Peel and cut the potatoes into small cubes.
2. Preheat the oven to 180°C (350°F).
3. Place the potatoes in a baking dish and season with salt, pepper, fresh oregano, sweet paprika, and thyme.
4. Add the olive oil, butter, white wine, lemon juice, and a little water.
5. Place the sausages on top of the potatoes and drizzle with a bit of olive oil.
6. Bake in the oven for 25-30 minutes.
7. Cut the cherry tomatoes in half and crumble the feta cheese.
8. Five minutes before the dish is ready, add the tomatoes and feta.
Note: Baking times may vary depending on the size of the potatoes. If the potatoes are cut into larger pieces, add the sausages towards the end to prevent them from drying out.
