Ingredients
Ingredients:
• 100g smoked bacon from Greek Black Pig of Olympus
• 200g baby potatoes
• 30g fresh butter
• 20mL extra virgin olive oil
• 50mL white wine
• 50g grated graviera cheese
• 10g fresh thyme, finely chopped
• Juice of 1 lemon
• 10g sweet paprika (boukouvo)
• 1 sprig fresh oregano
• Salt
• Freshly ground pepper
For the Aromatic Herb Oil:
• 20g fresh mint
• 20g fresh parsley
• 20g chives
• ½ chili pepper
• 50mL extra virgin olive oil
Preparation:
1. Preheat the oven to 180°C.
2. Wash the potatoes, place them in a baking dish, add salt, pepper, oregano, olive oil, and a little water, then bake for 20-25 minutes.
3. Cut the smoked bacon into cubes and slice the potatoes in half.
4. Place a pan over high heat and add the butter. Then, add the potatoes and smoked bacon and sauté. Add the sweet paprika, thyme, lemon juice, and wine. Let it simmer for 2-3 minutes.
For the Aromatic Herb Oil:
- Add all the ingredients to a blender and blend until combined into a smooth mixture.
- Serve the potatoes with smoked bacon on a plate, drizzle with the aromatic herb oil, and sprinkle with grated graviera cheese.
