Ingredients:
• 2 burgers 70/30 from Black Pig of Olympus and Beef
• 3 slices smoked pancetta from Black Pig
• Rustic salad tartare
• Burger bun
• Spicy cheese sauce
• Caramelized onions
• Potatoes
• Mustard sauce
• Cherry tomatoes
For the caramelized onions:
• 60g onion
• 5g sugar
• 1/20 thyme
• 10g aged balsamic vinegar
• 5g honey
Preparation
For the caramelized onions:
• Peel the onions and slice them into half-moons. Heat olive oil in a pan and sauté the onions on low heat. Add sugar and thyme. Once the onions soften, add the balsamic vinegar and honey.
Main Preparation:
1. Grill the burgers and smoked pancetta until golden and juicy.
2. Toast the burger buns.
3. Fry the fresh potatoes.
4. Spread spicy cheese sauce on the bun, add the rustic salad tartare, place the burgers, smoked pancetta, and top with the caramelized onions.
5. Serve the burger with fried potatoes, mustard sauce, and cherry tomatoes on the side.
