Ingredients
▪ 600-700 g fresh Greek Black Pig of Olympus, cubed
▪ 3 kg yellow pumpkin, peeled and cut into large cubes
▪ 200 mL olive oil
▪ 2 onions
▪ 2 garlic cloves
▪ 100 g ginger (fresh)
▪ 2 tbsp tomato paste
▪ 2 cinnamon sticks
▪ 1 tsp coriander seeds
▪ ½ grated nutmeg
▪ 4 whole cloves
▪ 8 black peppercorns
▪ 1 glass of vinegar (wine vinegar)
▪ 200 g chopped tomatoes
▪ Salt
▪ Pepper
Preparation
1. Place all the ingredients, except for the pumpkin, in the Dutch oven. Once the food is halfway cooked, add the pumpkin.
2. Stir and allow to cook in the oven at 200°C for about 2 hours.
