Ingredients
▪ 1 French-cut Greek Black Pig of Olympus steak
▪ 50 g smoked Greek Black Pig of Olympus pancetta
▪ 200 g mushrooms (fuska & portobello)
▪ ¼ medium onion
▪ ½ garlic clove
▪ 50 g Florina pepper
▪ 10 g fresh butter
▪ 20 mL extra virgin olive oil
▪ 50 mL white wine
▪ 20 g fresh parsley, finely chopped
▪ 2 sprigs thyme
▪ Salt, fresh pepper, paprika, oregano, rosemary
For the Aromatic Yogurt
▪ 100 g yogurt
▪ 10 g parsley
▪ ½ lemon juice & zest
▪ 10 g fresh mint
▪ Salt, fresh pepper, sweet paprika
Preparation
1. Marinade the steak with salt, fresh pepper, sweet paprika, oregano, rosemary, and olive oil.
2. Grill the steak.
3. Slice the mushrooms and finely chop the smoked Greek Black Pig of Olympus pancetta, onion, garlic, and Florina pepper.
4. Heat a pan on high and add olive oil. Then add the mushrooms, smoked pancetta, onion, garlic, Florina pepper, and thyme and sauté.
5. Deglaze with white wine and let it evaporate.
6. Add salt, fresh pepper, parsley, and butter.
For the Aromatic Yogurt
1. Finely chop the aromatic herbs.
2. In a bowl, mix the yogurt, chopped herbs, lemon juice, lemon zest, salt, fresh pepper, and paprika.
